  • 2 large onions, finely chopped
  • 1 cup grated coconut
  • 2 green chillies, chopped
  • 1-inch piece of ginger, grated
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Curry leaves
  • Salt to taste
  • Water as needed
Instructions:

  1. Heat oil in a pan or skillet over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add asafoetida and curry leaves.
  2. Add the finely chopped onions to the pan and sauté until they turn translucent and lightly browned.
  3. In a blender or food processor, blend together grated coconut, green chillies, and grated ginger with a little water to form a smooth paste.
  4. Add the coconut paste to the pan with onions and mix well. Cook for a few minutes, allowing the flavours to meld together.
  5. Add water as needed to achieve the desired consistency for the saagu. It should be thick but pourable.
  6. Season with salt to taste and simmer the saagu for a few more minutes, stirring occasionally.
  7. Once the saagu is cooked and the flavours have come together, remove it from the heat.
