Ingredients:
- 2 large onions, finely chopped
- 1 cup grated coconut
- 2 green chillies, chopped
- 1-inch piece of ginger, grated
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Curry leaves
- Salt to taste
- Water as needed
- Heat oil in a pan or skillet over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add asafoetida and curry leaves.
- Add the finely chopped onions to the pan and sauté until they turn translucent and lightly browned.
- In a blender or food processor, blend together grated coconut, green chillies, and grated ginger with a little water to form a smooth paste.
- Add the coconut paste to the pan with onions and mix well. Cook for a few minutes, allowing the flavours to meld together.
- Add water as needed to achieve the desired consistency for the saagu. It should be thick but pourable.
- Season with salt to taste and simmer the saagu for a few more minutes, stirring occasionally.
- Once the saagu is cooked and the flavours have come together, remove it from the heat.
