Ingredients:
- 8-10 garlic cloves
- 4-5 dried red chilli peppers (adjust based on your spice preference)
- 1 tablespoon oil (preferably vegetable or sesame oil)
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- Salt to taste
- Water (as needed)
Instructions:
- Heat the oil in a pan over medium heat.
- Add the cumin seeds and mustard seeds to the hot oil. Allow them to sizzle and splutter for a few seconds.
- Add the garlic cloves and dried red chilli peppers to the pan. Sauté them for a few minutes until the garlic cloves turn golden brown and the chilli peppers become slightly crispy. Make sure not to burn them.
- Remove the pan from heat and let the mixture cool down.
- Once cooled, transfer the garlic, chilli peppers, cumin seeds, and mustard seeds to a blender or food processor. Add salt to taste.
- Grind the ingredients into a coarse paste. If needed, add a little water to adjust the consistency and make it easier to blend.
- Taste the chutney and adjust the salt and spiciness according to your preference.
- Transfer the garlic chutney to a clean, airtight jar or container.
- The chutney can be served immediately, but the flavours tend to develop and intensify over time, so it's recommended to let it sit for a few hours before use.
- You can enjoy garlic chutney as a condiment with various dishes like dosas, idlis, vadas, sandwiches, and parathas, or as a spicy accompaniment to Indian meals.
